I have very fond childhood memories of coffee cake from Starbucks. While everyone else loved getting their special Starbucks drink, I would look forward to only the coffee cake. Unfortunately, they don’t carry that same coffee cake anymore and since I’ve been feeling very nostalgic over the buttery, vanilla flavor and crumbly, crisp topping, I decided it was time to make my own.
If you’ve ever had Starbucks’ classic coffee cake, this version tastes almost exactly like it. It starts with a thick layer of extremely moist, buttery, and fluffy layer of cake topped with a cinnamon infused crumble, crisped to perfection.
The soft and pillowy texture of the cake contrasts beautifully with the sweet and slightly salty crunch of the crumble topping, making this cake the ideal treat to dip or snack on with your hot coffee or tea. Especially with the colder days approaching us soon, it would be so satisfying to cozy up with a slice of coffee cake cake with a nice, hot drink. If you want to go over the top, this cake tastes amazing warm, best when its about thirty minutes out of the oven. Make sure you have a crowd to prevent yourself from eating up the whole dish!
